How to use   Rub onto meat to marinate (either dry or by mixing with a little good-quality olive oil) and leave to rest for at least 5 minutes before cooking. Add to non-meat dishes as seasoning during cooking.

Inspiration   The ancient town of Sarlat in France’s southwest sits within the gastronomically-rich region of the Perigord. The Perigord is broken up into four colours: black (of which Sarlat is the capital), green, white and purple. The region is notably famous for truffles, foie-gras and magret de canard, ie, duck!
