How to use   Dry rub onto your beef cut of choice, and leave to rest for at least 5 minutes before cooking. Add to non-meat dishes as seasoning during cooking.

Inspiration   Bazas. This commune in the Gironde department in southwestern France is famous for its cattle of the same name. Bazas beef is highly regarded for its tenderness, flavour and is characterised by its marbling.
