Satisfying homemade chicken noodle soup using Le Fermier!

Is there anything more comforting than a delicious chicken noodle soup on a cold night? We think not! Here's my simple recipe on how to make a super satisfying, homemade chicken noodle soup!

The ingredients are:

* 20g ginger, roughly chopped
* 4 garlic cloves, crushed
* 1 shallots, roughly chopped
* 2 spring onions , sliced
* 1/2 bunch coriander, chopped
* 3 brown mushrooms
* 1.5 l chicken stock
* 1 teaspoon Basque Blend
* 2 free range chicken breast
* 80 g wheat noodles
* 1 tin (100 g )sweet corn, blended
* 2 tablespoon soy sauce


1. Heat a sauce pan of soup pot with a drizzle of olive oil.
2. Cook the shallots, garlic and ginger for a couple of minutes.
3. Add the Basque Blend, stir, then add half the mushrooms and half of the spring onions. Cook for a further couple off minutes.
4. Add the chicken stock, bring to the boil and add the chicken breast. Cook until the chicken is cooked through, about 15 minutes.
5. Remove the chicken from the stock, strain the stock and keep the liquid.
6. Pour the stock back in the pot, return to the flame and add the corn and the noodle, cook until the noodle are Al dente. About 8 minutes.
7. Add the rest of the spring onions and coriander.
8. Shred the chicken in the soup, and add the rest of the mushrooms and simmer for 5 minutes.
