Quick and Easy smoked salmon, fennel and feta Quiche using the Le Fermier Marseille Blend

Mini Quiche's are a staple in so many in kitchens, parfect for a snack or for children, too! Here's my version using my Marseille Blend.

The ingredients are:

* 200 g smoked salmon
* 2 shallots, diced
* 1/2 fennel, diced or finely sliced
* 3 teaspoons Le Fermier Marseille Blend
* 50 g spinach, chopped
* 300 ml cream
* 150 ml milk
* 3 free range eggs
* 50 g Persian feta
* 1 lemon zest
* 1 roll puff pastry

Method:

1. Preheat your oven at 190 degrees Celsius.
2. In a hot fry pan, pour in a little extra virgin olive oil. Cook the shallots and fennel until softened.
3. Add the Marseille Spice Blend, give it a toss and add the chopped spinach. Cook until the spinach is wilted and set aside.
4. Crack the free range eggs in a mixing bowl, pour in the cream and the milk, pinch of salt and whisk to combine.
5. Roll out the puff pastry in a tart mould, place the fennel mix at the bottom and spread it around. Spread the smoked salmon around the mould and pour in the cream mix.
6. Bake the quiche for 40-45 minutes.
