Michelin Chef's Perfect Mussels in White Wine Sauce Recipe

My Marseille Blend is my secret ingredient to creating the perfect mussels. It Helps created a well rounded aroma with the anis like flavor from the fennel, the fresh herbs and the slight acidity of the white wine.

Ingredients:
1/2 kg mussels ( cleaned)
2 shallots sliced,
1/4 fennel sliced,
chive parsley chopped,
200 ml white wine,
50 ml cream,
1 tsp fennel seeds,
30 g butter,
Le Fermier Marseille Blend.

Method:
Cook the Shallots, fennel and fennel seeds for a few minute.
Add the mussels and stir,
Add the wine, cover and bring to the boil
Add the cream, stir then add the herbs and season to taste.
