Go-To Pumpkin Soup using the Le Fermier Périgord Blend!

I love this recipe because it create a rich and creamy soup and using my Périgord Blend which gives it such a delicious taste!

The ingredients are:

* 1/2 pumpkin, diced
* 1 brown onion diced
* 4 garlic cloves, chopped
* 50 g hazelnut , crushed
* 50 g wild mushrooms
* 1 litre beef stock
* 1 bunch thyme, chopped
* 200 ml thickened cream
* 2 tablespoon Périgord Blend
* 1 big potato


Go-To Pumpkin Soup using the Le Fermier Périgord Blend!


Method:

1. Preheat oven at 180 degrees Celsius.
2. Place the diced pumpkin in a baking tray and sprinkle 2 tablespoon of Le Fermier Périgord spice blend on top, drizzle some extra virgin olive oil and cover with foil. Bake the pumpkin until soft.
3. Meanwhile, in a deep cooking pot cook the onion, garlic and thyme until slightly colored.
4. Add the hazelnut and the wild mushrooms and potato. Sprinkle the rest of the Périgord blend, stir then add the stock. Bring to the boil and simmer until the potatoes are cooked.
5. Add the pumpkin once cooked, the thickened cream, correct the seasoning if necessary, I like to add a bit more salt, truffle salt if you have it.
6. Mix in an electric blender until smooth and serve with some toasted hazelnuts and a crunchy baguette.
