3 Easy and Warming Autumn Soups!

What's better than a warming soup on a cold day?

Here are 3 easy soups to make this Autumn:

Roasted pumpkin and coconut soup

Ingredients:

* 1/2 pumpkin, skinned and diced
* 1 brown onion, chopped
* 5 garlic cloves
* 2 tablespoon Louisiana blend
* 1 tin coconut cream
* 200 ml chicken stock

Method:

1. Preheat oven at 180.
2. Place the onion, garlic and pumpkin in a baking tray. Drizzle with olive oil and sprinkle with the Louisiana blend.
3. Heat up the chicken stock and coconut cream to a simmer.
4. Once cooked blend the veggies with the hot chicken stock and coconut milk

Creamy Mushroom Soup 

Ingredients:

* 250g flat mushrooms, chopped
* 1 brown onion, chopped
* 5 cloves garlic
* 2 tablespoon Perigord Blend
* 200 ml thickened cream
* 50 g butter
* 150 ml beef stock

Method:

1. Heat up a saucepan with olive oil.
2. Start by cooking the onions and garlic for about 5 minutes on medium heat.
3. Add the mushrooms l and Périgord blend and cook for a further 5 minutes.
4. Add the beef stock and simmer for 20 minutes.
5. Bring the cream and butter to the boil .
6. Blend the mushroom mix and cream together in an electric mixer.
7. Adjust seasonings if need be.



Cauliflower Velouté 

Ingredients:

* 1 cauliflower, roughly chopped
* 2 potatoes, peeled and chopped
* 1 stick celery
* 2 tablespoon Bresse blend
* 1 brown onion
* 4 garlic cloves
* 300 ml vegetable stock

Method:

1. Heat a saucepan with a drizzle of olive oil.
2. Cook the onions and garlic for 5 minutes.
3. Add the rest of the veggies and the Bresse spice blend and cook for a further 5 minutes.
4. Add the stock and simmer until the veggies are soft.
5. Add the cream and simmer for a further 5 minutes.
6. Blend the soup in an electric mixer and add the butter.
7. Adjust seasoning if needs be.
